THE SANTA MARIA BBQ
Cooking with wood on a traditional BBQ would yield pretty bad results, as the fat from the meat would drip onto the fuel and flare up. The outcome would be very black, very bitter and not very cooked meat. A Santa-maria grill has two important features; firstly a grill you can raise and lower above firebox to control the heat, secondly the grill is formed of v-shaped bars that the fat run down an into a tray instead of the fire below. The result of these two factors is a fabulously smokey flavours but with the precision of a professional kitchen.
Our passion starts with food and cooking, but what gets us really excited is when we're grilling outdoors on wood or charcoal.
The traditional British BBQ is great for a load of bangers and a burger on a sunny afternoon, but when you need control over what you're cooking nothing compares to a Santa Maria BBQ.
Our obsessions began from cooking steaks, big steaks. But like anything once you peel back the layers there’s endless things to cook on a proper BBQ.
After many years experimenting with various BBQs we happened upon a foodie festival in Santa Maria Valley, California where we first tasted beef ribs cooked over wood and got immediately hooked.
