Santa Maria barbecue is all about simplicity, by definition it's just meat cooked on a large, iron grill that moved up and down to control the cooking temperature. It's similar the asado of Argentina but with a couple of unique elements - Instead of coal use red or live oak; No sauce, just a dry rub of salt, pepper and garlic powder.
ABOUT OUR GRILLS
Our grills are designed in the US and manufactured by specialist fabricators in a factory in Mexico. They are constructed from heavy gauge 3/16" steel and painted with specially formualated paint system.
Our grills are specified with a fire brick firebox chamber which retains the heat of the fire to provide an even cooking platform.
